This warm, hearty brekkie is easy to make and perfect for those mornings when a piece of toast just won’t cut it. Quinoa is one of the few plant-based foods to provide a complete source of protein, which means it will help you feel full until lunchtime, and is also high in iron, magnesium and dietary fibre. Best of all, quinoa flakes are gluten-free – which makes this healthy porridge a great alternative to traditional oats.
Try adding sultanas, grated apple or berries to your porridge during the last two minutes of cooking. Then top with coconut, your choice of nuts or seeds and a drizzle of natural sweetener (try pure maple syrup, a sprinkle of rapadura sugar or honey).
- 1 cup quinoa flakes
- 2 cups milk (cow’s milk, almond or coconut)
- Pinch of ground cinnamon
Place the milk in a saucepan and bring to the boil. Add quinoa flakes, immediately reduce heat and cook for 5-10 minutes. Stir in the cinnamon. Serve and enjoy!
